Seafood Tomato Alfredo

Last night for dinner I made seafood tomato alfredo. I got it off the back of a can of Campbell's cream of mushroom with roasted garlic soup. Of COURSE I tweaked it a bit. It called for fish and I used shrimp, scallops and crab instead. I served it over angel hair pasta and seasoned green beans on the side.
This is what the sauce looked like as I was cooking it. the sauce would make a pretty good seafood stew if you didn't want pasta I think.
This is all of it together. Not the best picture but you get the idea.

It's been awhile

Alot has happened since I last posted. We moved to Cache Valley Utah. More specifically Hyrum.
I love the views and we are so close to a temple and it happens to be the temple that my grandparents were sealed in for all time and eternity so that makes me happy and someday I hope to be sealed to Brandon in that same temple.

I also dyed my hair blonde.....ok I only got it streaked/highlighted. It makes my hair seem a lot lighter though I love it I think it makes my face seem narrower but maybe that's just me lol.
The streaks are pretty defined but I couldn't seem to get a good picture and the pictures i took when I first got it done make the bottom half look all blonde.

Brandon is working for a company that does outbound surveys. He's doing really well and usually has the top rate in the center. He likes it and I'm happy and I hope he continues to like it.

I'm still working for KGB. It's a good job but things are dying down and I don't feel I can get as many questions as I need and was used to for that reason I am currently looking for work. I think that I should get a job and besides it would be a way to meet people something I don't currently have. I had a job interview today and I should know by Wednesday. I hope I get it.

Happy Birthday Enid!

I know this entry is a few days late, but things have been hectic and I'm sick so i didn't want to get to it till now....I know I'm horrible!

Anyways we celebrated her birthday on Wednesday which was the day before at Brandon's parents house. I baked a cake. I was hoping that Walmart's bakery still sold the kits like they used to but no luck so I manged to find some Tinkerbell cake decorations and a small Tinkerbell toy to use.
I used a strawberry flavored cake which made the batter pink and I used a cream cheese frosting which I colored purple. It looked really cool and I wish I had thought to take a picture once the cake was all cut up...
Anyways here is the result...not too pretty since my handwriting sucks but I still think it looks cool.
We ate dinner and then we opened presents. She did pretty well. Both her and Aidin got buckets with shovels and bubbles. Aidin's was Diego and Enid's was Dora. Enid then got a princess pop up hamper, Everbody's Hero and Tinkerbell (movies), a BUNCH of color wonder stuff, this little bus play thing. and some other stuff I may of forgotten who knows...but here is some pictures of the stuff. Then after she opened presents we had cake. This is Brandon bringing her cake out to her.

This is right before or right after she blew out her candle. Don't ask me what Justin is doing cause I have no clue.

Dinner Monday, June 1, 2009

I tried my hand at making dinner tonight...well something other than Mac and Cheese or Grilled Cheese Sandwiches. I made seasoned chicken fillets with Chunky Garlic and Herb Spaghetti sauce. Then we heated up the leftover green beans and rice from last nights dinner. This is what it turned out like.
The way i made it was, after thawing the chicken, i put it upside down in the pan and seasoned the crap out of it. Then, while i was waiting for the oven to preheat to 400, i turned the chicken over, so the seasoned side was down. After the oven preheated, I turned the chicken back over so the seasoned side was up. then i put the chicken in the over for 10 min. once the 10 min was up, i took the chicken out, turned it over and poured the sauce over the top. I then put the chicken back in the oven for another 20 min. I was worried that i had put too much seasoning on it, but it turned out great. Even both the kids ate it all!
